Fish fillet 500 g [Tuna Fillet Sashimi Grade]
Cashews 30 g
Orange (s) 50 g [Orange Segments ]
Green onion(s) 15 g
Sesame seeds 5 g
Salad vegetables 200 g


Selected Light Soy Sauce 2 tbsp
Hoisin Sauce 1/4 cup
Abalone Sauce 1 cup
White Vinegar 1/2 cup
Cilantro (Picked) 5 g
Sesame Seeds 2 g
Honey 1 tbsp
Salt 1/4 tsp
Pepper 1/4 tsp

  1. Add all vinaigrette ingredients into a bowl and whisk until everything is emulsified.
  2. Heat a grill pan till it gets almost smoky, cut tuna into potion sizes and baste with teriyaki sauce. Pan sear for 30 seconds per side. Remove from heat and let rest for 1 minute.
  3. To plate up, place salad greens in centre of bowl, place tuna in the centre and garnish with rest of salad ingredients.
  4. Drizzle the salad with vinaigrette. Serve with chilled fork .
