Roasted Chicken with XO Sauce

Spring chicken 1 pc
Potato(es) 200 g [1pc]
Chinese mushroom(s) 2 pcs [soaked and diced]
Green onion(s) 1 pc [diced]


Salt 1 tsp
White pepper to taste
XO Sauce 2 tbsp
Premium Brand Oyster Sauce 1 tbsp
Water 1/2 tbsp

  1. Rub spring chicken with marinade.
  2. Put potato in boiling water and simmer until tender.  Remove skin and mash.
  3. Saute mushrooms and green onion in 1 tbsp oil.  Add mushrooms, green onion and  seasoning mix to mashed potato.  Mix well.
  4. Stuff potato into spring chicken.  Seal the tail of chicken with skewers.
  5. Bake spring chicken at 190C/375F for 30-35 minutes until done, turning occasionally.
